How to Make Indian Appetizers with Rice

1. Rice Bonda

Rice Bonda is a popular South Indian appetizer made from leftover rice. Crisp on the outside and soft inside, these potato-stuffed rice balls are a delight.

Ingredients:

  • 2 cups cooked rice
  • 1 cup boiled and mashed potatoes
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 green chilies, finely chopped
  • 1 tablespoon chopped cilantro
  • 1/2 cup gram flour (besan)
  • Salt to taste
  • Oil for deep frying

Instructions:

  1. In a pan, heat oil and add mustard and cumin seeds. Once they splutter, add green chilies and cilantro.
  2. Mix cooked rice and mashed potatoes, and then add the tempered spices. Season with salt.
  3. Form small balls from the mixture and coat them in gram flour.
  4. Deep fry the balls until golden brown. Serve hot with chutney.

2. Rice and Vegetable Pakoras

Pakoras are a favorite snack in India, and incorporating rice into the batter gives them a unique texture and flavor.

Ingredients:

  • 1 cup cooked rice
  • 1 cup mixed chopped vegetables (carrots, bell peppers, spinach)
  • 1 cup gram flour
  • 1 teaspoon red chili powder
  • Salt to taste
  • Water as needed
  • Oil for frying

Instructions:

  1. In a mixing bowl, combine the cooked rice, chopped vegetables, gram flour, red chili powder, and salt.
  2. Add water little by little to form a thick batter.
  3. Heat oil in a frying pan, and drop spoonfuls of the batter into the hot oil.
  4. Fry until golden brown and crispy. Serve with green chutney.

3. Spicy Rice Fritters

These fritters are made with rice flour and are both gluten-free and incredibly tasty.

Ingredients:

  • 1 cup rice flour
  • 1/2 cup yogurt
  • 2 green chilies, finely chopped
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • Water as needed
  • Oil for frying

Instructions:

  1. In a bowl, mix rice flour, yogurt, green chilies, cumin seeds, turmeric powder, and salt.
  2. Add water gradually to make a smooth, thick batter.
  3. Heat oil in a kadhai and drop spoonfuls of the batter into the hot oil.
  4. Fry until crispy and golden on both sides. Serve with a tangy tamarind dip.

4. Stuffed Rice Puffs (Khichdi Dhokla)

These steamed rice puffs make for a healthy and light appetizer option.

Ingredients:

  • 2 cups cooked rice
  • 1 cup yogurt
  • 1/4 cup chopped spinach
  • 1/4 cup grated carrot
  • 1 teaspoon mustard seeds
  • 1 teaspoon ginger paste
  • Salt to taste
  • Oil for greasing
