How to Make Sweet Indian Desserts Using Fresh Ingredients

1. Kheer (Rice Pudding)

Kheer is a classic Indian dessert made from rice, milk, and sugar. To make a delicious kheer using fresh ingredients, follow these steps:

  • Ingredients:
    • 1 cup basmati rice
    • 4 cups whole milk
    • 3/4 cup sugar
    • 2-3 cardamom pods
    • 1/4 cup chopped nuts (almonds, cashews)
    • 1/4 cup fresh raisins
    • A pinch of saffron (optional)

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Soak the rice for about 30 minutes, then drain it.
  3. In a heavy-bottomed pan, bring the milk to a boil. Add the soaked rice, cardamom pods, and saffron.
  4. Simmer on low heat for about 30 minutes, stirring occasionally until the rice is cooked and the mixture thickens.
  5. Stir in the sugar, nuts, and raisins. Cook for another 5 minutes.
  6. Let it cool before serving, and garnish with more nuts if desired.

2. Gulab Jamun

Gulab Jamun are soft, syrup-soaked balls that are loved by many. Using fresh khoya (reduced milk) makes them even more special.

  • Ingredients:
    • 1 cup khoya
    • 1/4 cup all-purpose flour
    • 1/4 tsp baking powder
    • Oil for deep frying
    • 2 cups sugar
    • 1.5 cups water
    • 1 tsp rose water

Instructions:

  1. In a mixing bowl, combine khoya, all-purpose flour, and baking powder. Knead until smooth.
  2. Form small balls from the dough, ensuring there are no cracks.
  3. Heat oil in a deep pan and fry the balls on low heat until golden brown.
  4. In another pot, dissolve sugar in water and bring to a boil. Add rose water and let it simmer for a few minutes.
  5. Once fried, immerse the warm gulab jamun in the sugar syrup for at least an hour before serving.

3. Fresh Mango Mousse

This refreshing dessert is perfect for summer months, showcasing the deliciousness of ripe mangoes.

  • Ingredients:
    • 2 ripe mangoes
    • 1 cup heavy whipping cream
    • 1/2 cup sugar
    • 1 tbsp lemon juice
    • 2 envelopes of gelatin (optional)

Instructions:

  1. Puree the mangoes in a blender until smooth. Add sugar and lemon juice, mixing well.
  2. If using gelatin, dissolve it according to package instructions and mix into the mango puree.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Gently fold the mango puree into the whipped cream, combining until well blended.
  5. Chill for at least 2 hours before serving. Garnish with fresh mango pieces.
