  • Ingredients: 1 cup lentils, 1 onion (chopped), 2 tomatoes (chopped), 2-3 green chilies, ginger-garlic paste, cumin seeds, turmeric, and salt.
  • Instructions: Boil the lentils in water until soft. In a separate pan, heat oil, add cumin seeds, then sauté onions, green chilies, and ginger-garlic paste until golden. Add chopped tomatoes, turmeric, and salt. Cook until the tomatoes soften. Mix in the boiled lentils and simmer for a few minutes. Serve with rice or whole-grain rotis.

2. Chickpea Curry (Chole)

  • Ingredients: 1 can of chickpeas, 1 onion, 2 tomatoes, 1 tsp cumin seeds, 1 tsp garam masala, coriander powder, and chili powder.

  • Ingredients: 200g paneer, 2 cups spinach, 1 onion, 1 tomato, ginger-garlic paste, and spices.
  • Instructions: Blanch spinach in hot water and blend into a paste. In a pan, sauté onions and ginger-garlic until aromatic, add tomatoes, and cook down. Mix in the spinach puree and simmer. Add cubed paneer and cook for a few more minutes. Serve with whole-grain naan or rotis.

4. Quinoa Upma

Quinoa is a super grain packed with protein, making it an excellent base for Upma, a traditional South Indian breakfast dish.

  • Ingredients: 1 cup quinoa, mixed vegetables (peas, carrots, bell peppers), mustard seeds, urad dal, curry leaves, and green chilies.
  • Instructions: Rinse quinoa and cook it as per package instructions. In a pan, heat oil, add mustard seeds, urad dal, curry leaves, and green chilies. Add mixed vegetables and sauté until tender. Mix in the cooked quinoa and stir well. Enjoy this nutritious breakfast dish as is or with coconut chutney.

5. Nut and Seed Powders

Enhance your meals with nut and seed powders like chia, flaxseeds, or almond powder. These can be added to smoothies, curries, or baked goods to boost protein content. For a quick protein shake:

  • Ingredients: 1 banana, 1 cup almond milk, 2 tbsp almond powder, and a sprinkle of cinnamon.
  • Instructions: Blend all ingredients until smooth and creamy. This shake can be a healthy snack or breakfast alternative.
