Instructions

Step 1: Prepare the Base
In a large pot, heat 2 tablespoons of oil over medium heat. Add the cumin and mustard seeds, allowing them to pop for about 30 seconds. This releases their flavors into the oil.

Step 2: Sauté Aromatics
Add the chopped onions, minced garlic, and grated ginger to the pot. Sauté until the onions turn translucent and fragrant, about 5-7 minutes. Next, stir in the chopped green chilies, turmeric powder, and red chili powder, cooking for another minute.
