  • 2-3 tablespoons vegetable oil or ghee
  • 1 large onion, thinly sliced
  • 1 teaspoon ginger-garlic paste
  • 1-2 green chilies, slit (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (optional)
  • 3-4 cups mixed vegetables (carrots, peas, beans, potatoes, etc.)
  • 1/2 cup yogurt
  • 2-3 cups water

Instructions

Step 1: Prepare the Rice

Begin by rinsing the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside. Soaking helps the rice cook evenly and prevents it from becoming mushy.

Step 2: Sauté the Onions

In a large pot or a deep skillet, heat the oil or ghee over medium heat. Add the cumin seeds and let them sputter. Then, add the sliced onions and sauté until they become golden brown. This caramelization adds depth to the flavor of the biryani.

Step 3: Add Spices and Vegetables

Stir in the ginger-garlic paste and green chilies, cooking for a minute until fragrant. Next, add the turmeric powder, red chili powder (if using), and garam masala. Mix well before adding in the mixed vegetables. Sauté the vegetables for about 5-7 minutes until they are tender but still crisp.

Step 4: Combine Yogurt and Rice

Reduce the heat to low and add the yogurt. Stir well to combine it with the vegetable mixture. Cook for another 2-3 minutes. Now, gently fold in the drained basmati rice, being careful not to break the grains.

Step 5: Cooking the Biryani

Add 2-3 cups of water to the pot, depending on how dry or moist you like your biryani. Season with salt to taste. Bring the mixture to a boil, then cover the pot with a tight-fitting lid and reduce the heat to low. Let it cook for about 20-25 minutes, or until the rice is fully cooked and the water has been absorbed. Avoid lifting the lid too often to keep the steam intact.

Step 6: Fluff and Serve

Once cooked, turn off the heat and let the biryani sit for about 10 minutes with the lid on. This resting time allows the flavors to meld. After resting, gently fluff the biryani with a fork, mixing the rice and vegetables. Garnish with freshly chopped coriander and mint leaves.
