How to Make Classic Indian Vegetarian Samosas

Ingredients for the Samosa Dough

  • 2 cups all-purpose flour
  • 4 tablespoons oil (vegetable or ghee)
  • ½ teaspoon carom seeds (ajwain)
  • ½ teaspoon salt
  • Water, as needed

  • 3 medium potatoes, boiled and mashed
  • 1 cup green peas (fresh or frozen)

  • 1 teaspoon cumin seeds

2. On a floured surface, roll out each ball into a thin oval shape.
3. Cut the oval in half to form two semi-circles. Take one semi-circle, and form a cone shape by bringing the straight edges together. Seal the edge with a little water.
4. Fill the cone with the potato mixture, leaving some space at the top. Seal the open edge by pinching it together, ensuring there are no gaps.

Frying the Samosas

1. Heat oil in a deep pan over medium heat. To check if the oil is ready, drop a small piece of dough into the oil; it should sizzle and rise to the surface.
2. Carefully add a few samosas at a time into the hot oil. Fry them until they turn golden brown, turning occasionally for even cooking.
3. Once fried, remove the samosas using a slotted spoon and place them on paper towels to absorb excess oil.

Serving Suggestions
