1. Poha

Ingredients: 2 cups poha (flattened rice), 1 onion (finely chopped), 1 green chili (slit), 1 tsp mustard seeds, 1/2 tsp turmeric powder, curry leaves, salt to taste, and coriander leaves for garnish.

Instructions:

  • Rinse the poha in water for a few seconds and drain well. Set aside.
  • In a pan, heat oil and add mustard seeds. When they splutter, add onions, green chilies, and curry leaves. Sauté until the onions become translucent.
  • Add turmeric and salt, then mix in the poha. Cook for a few minutes and garnish with coriander leaves before serving.

2. Idli

Idli is a fermented rice and lentil cake that is soft and fluffy. It is a staple breakfast in South India, often served with coconut chutney and sambar.

Ingredients: 2 cups idli rice, 1 cup urad dal (split black gram), salt, and water for grinding.

Instructions:

  • Soak rice and urad dal separately for 6-8 hours or overnight. Drain and blend both into a thick batter, adding water as needed.
  • Ferment the batter overnight in a warm place. Once fermented, add salt to taste.
  • Pour the batter into idli molds and steam for about 10-12 minutes. Serve hot with chutney and sambar.

3. Aloo Paratha

Aloo paratha is a stuffed flatbread made with spiced mashed potatoes. It is enjoyed across India and pairs well with yogurt or pickle.

Ingredients: 2 cups whole wheat flour, 2 boiled potatoes (mashed), 1 tsp cumin seeds, 1 green chili (finely chopped), coriander leaves, and salt.

Instructions:

  • In a bowl, mix wheat flour with water to make a soft dough. Let it rest for 20 minutes.
  • In another bowl, combine mashed potatoes, cumin seeds, green chili, coriander leaves, and salt.
  • Divide the dough and filling into equal portions. Roll out the dough, place a ball of filling inside, and seal it. Roll again gently to make a flatbread.
  • Cook on a hot griddle until both sides are golden brown. Serve with butter or yogurt.

4. Upma

Upma is a savory dish made from semolina, veggies, and a blend of spices. It's quick to prepare and can be customized with your favorite ingredients.

Ingredients: 1 cup semolina, 1 onion (chopped), 1/2 cup mixed vegetables (carrots, peas), 1 tsp mustard seeds, 1 green chili (chopped), and salt.

Instructions:

  • In a pan, dry roast the semolina until light brown. Remove and set aside.
  • In the same pan, heat oil and add mustard seeds. Once they crackle, add chopped onions and green chili. Cook until onions are translucent.
  • Add mixed vegetables and sauté for a few minutes. Pour in 2 cups of water and bring it to a boil.
  • Add salt and then slowly add the roasted semolina, stirring continuously to avoid lumps. Cook until the semolina absorbs all the water. Garnish with coriander leaves and serve hot.
