Easy Oven Tandoori Chicken

Ingredients: - 1 ½ pounds of chicken (preferably bone-in, skinless thighs or drumsticks) - 1 cup of plain yogurt - 2 tablespoons of lemon juice - 2 tablespoons of tandoori masala - 1 tablespoon of paprika - 1 teaspoon of ground cumin - 1 teaspoon of ground coriander - 1 teaspoon of turmeric - 1 teaspoon of chili powder (adjust to your spice preference) - 3 cloves of garlic, minced - 1-inch piece of ginger, grated - Salt to taste - Freshly chopped cilantro for garnish

Instructions: 1. In a bowl, mix together the yogurt, lemon juice, tandoori masala, paprika, cumin, coriander, turmeric, chili powder, garlic, ginger, and salt to form a marinade. 2. Score the chicken pieces with a knife to help the marinade penetrate. Place the chicken in the marinade, making sure each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight. 3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. 4. Arrange the marinated chicken pieces on the baking sheet, making sure they are not overcrowded. 5. Bake in the preheated oven for 30-35 minutes or until the chicken is cooked through, turning once halfway through the cooking time. 6. If desired, you can broil the chicken for a few minutes at the end to get a charred effect. 7. Garnish with freshly chopped cilantro and serve hot with rice, naan, or a side salad.
