  • 200ml heavy cream
  • 2 teaspoons garam masala
  • 1 teaspoon red chili powder
  • Salt, to taste

Instructions:

  1. Marinate the chicken with yogurt, ginger, garlic, and spices for at least 30 minutes.
  2. In a pan, melt the butter and sauté the onion until golden brown.
  3. Add the marinated chicken and cook until browned.
  4. Stir in the crushed tomatoes, heavy cream, and spices. Simmer for 20 minutes.

  • 500g lamb, cut into pieces

  • 3 tablespoons yogurt
  • 2 tablespoons ginger-garlic paste
  • 4-5 dried red chilies
  • 1 teaspoon garam masala
  • Salt, to taste

Instructions:

  1. Cook the onions in oil until golden brown.
  2. Add the lamb and ginger-garlic paste, cooking until the meat is browned.
  3. Blend the dried red chilies with water and add to the pot along with yogurt.
  4. Simmer until the lamb is tender. Stir in garam masala before serving.

3. Chicken Vindaloo

Originating from Goa, Chicken Vindaloo is known for its fiery spices and tangy flavor, which is a perfect balance of heat and sourness.

Ingredients:

  • 500g chicken, cut into cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch ginger, grated
  • 2-3 teaspoons vinegar
  • 2 teaspoons chili powder
  • 1 teaspoon cumin powder
  • Salt, to taste

Instructions:

  1. Marinate the chicken with vinegar, garlic, ginger, and spices for a few hours.
  2. Sauté onions in oil until translucent.
  3. Add the chicken and cook on high heat until browned.
  4. Lower the heat, cover, and simmer until the chicken is cooked through.

4. Mutton Curry
