Ingredients

  • 1 kg fresh crabs, cleaned and cut into pieces
  • 2 tablespoons oil (mustard oil or coconut oil works best)
  • 1 large onion, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit lengthwise
  • 2 tomatoes, pureed
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1 cup coconut milk (optional)

Instructions

1. Prepare the Crab

Before cooking, ensure your crabs are clean. You can buy them live or pre-cleaned; if live, rinse them thoroughly under cold water. Crack the claws to allow the spices to penetrate better.

2. Heat the Oil

In a large pan or kadhai, heat the oil over medium heat. If using mustard oil, allow it to smoke slightly before reducing the heat. This gives the dish a deeper flavor.

3. Sauté Aromatics

Add the chopped onions and sauté until they are golden brown. This step is crucial as it builds the flavor base for your curry. Then, add the ginger-garlic paste and green chilies. Cook for an additional 2–3 minutes until the raw smell disappears.

4. Add Spices

Stir in the pureed tomatoes along with turmeric, red chili powder, and coriander powder. Cook this mixture on medium heat, stirring occasionally, until the oil separates from the masala. This indicates that your spice mixture is well-cooked.

5. Incorporate the Crab

Add the cleaned crab pieces to the pan, stirring well to coat them in the masala. Cook for about 5 minutes, allowing the crab to absorb the flavors.

6. Simmer

If you’re using coconut milk, add it at this stage for a creamier texture. Pour in a little water as needed to adjust the consistency of the curry. Bring it to a boil, then reduce the heat and let it simmer for 15–20 minutes until the crab is fully cooked and tender. The shells will turn bright red, indicating they are done.

7. Finish with Garam Masala

Once cooked, sprinkle garam masala over the curry and stir gently. Taste and adjust the salt if necessary.

8. Garnish and Serve

Garnish with freshly chopped coriander leaves. Serve your Indian-style crab curry hot with steamed rice or naan for a complete meal.

Tips for the Perfect Crab Curry

1. Fresh crabs yield the best flavor; however, frozen crabs can also work if fresh isn’t available.

2. Adjust the spice levels according to your preference by adding more or fewer green chilies and red chili powder.

3. Allow the curry to sit for a while before serving, as this helps the flavors meld together beautifully.
