  • 500 grams of fresh prawns, cleaned and deveined

  • 2-3 green chilies, slit

  • 3-4 tablespoons of cooking oil or ghee
  • Salt, to taste
  • Cilantro leaves for garnish

Instructions

Step 1: Prepare the Marinade

In a bowl, mix the cleaned prawns with yogurt, ginger-garlic paste, and salt. Allow the prawns to marinate for at least 30 minutes. This enhances the flavor and tenderness of the prawns.

Step 2: Sauté the Onions

In a large pan, heat oil or ghee over medium heat. Add the finely chopped onions and sauté until they turn golden brown. This will take about 10-15 minutes; be patient, as well-cooked onions add depth to the korma.

Step 3: Add the Spices

Once the onions are golden, add the korma paste and slit green chilies. Stir well and cook for 2-3 minutes until the spices become aromatic. Add the marinated prawns to the pan and cook for another 5 minutes, stirring occasionally.

Step 4: Create the Curry

Now, pour in the coconut milk (if using) and mix well. Allow the mixture to simmer for an additional 10 minutes on low heat. This will give the prawns ample time to cook through, absorbing all the delicious flavors.

Step 5: Garnish and Serve

Once the prawns are fully cooked, taste and adjust the salt as necessary. Turn off the heat and garnish with fresh cilantro leaves. Serve your Indian Prawn Korma hot with steamed rice, naan, or roti for a complete meal.
