Instructions

Step 1: In a large pot, heat the oil or ghee over medium heat. Add the cumin seeds and sauté until they start to sizzle and become fragrant.

Step 2: Add the chopped onion and sauté until it turns golden brown. Then, add the minced garlic and grated ginger, stirring for another minute until fragrant.

Step 3: Mix in the turmeric powder and garam masala, stirring well to combine the spices with the onions.

Step 4: Add the leftover cooked vegetables and lentils (if using), stirring to coat them with the spices. Sauté for about 2-3 minutes to warm through.

Step 5: Pour in the vegetable or chicken broth. If you prefer a thinner soup, you can add more broth or water. Add the green chilies and salt to taste.

Step 6: Bring the soup to a boil, then reduce the heat to low. Let it simmer for 10-15 minutes, allowing the flavors to meld together.

Step 7: Once done, remove from heat and garnish with freshly chopped coriander leaves.
