How to Make Indian Soup with Lentils and Vegetables

Indian soup, particularly dal, which is made with lentils and often includes various vegetables, is a nutritious and flavorful dish. Not only is it rich in proteins, but it also offers a comforting blend of spices that are characteristic of Indian cuisine. Here's a simple yet delicious recipe for making Indian soup with lentils and vegetables.

Ingredients

  • 1 cup red lentils (masoor dal)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 medium tomato, diced
  • 1 carrot, diced
  • 1 potato, diced
  • 1 cup spinach leaves (or any greens of your choice)
  • 4 cups vegetable broth or water
  • 2 tablespoons oil (vegetable or ghee)
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • Cilantro, for garnish

Instructions

Step 1: Rinse the Lentils
Begin by rinsing the lentils in cold water until the water runs clear. This helps remove excess starch and any impurities.

Step 2: Sauté the Vegetables
In a large pot, heat the oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then, add the chopped onions, garlic, and ginger. Sauté until the onions become translucent.

Step 3: Add the Remaining Vegetables
Stir in the diced tomato, carrots, and potatoes. Cook for about 5-7 minutes until the vegetables soften slightly. Add turmeric powder, coriander powder, and salt, stirring to combine.

Step 4: Cook the Lentils
Add the rinsed lentils and vegetable broth (or water) to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the lentils are tender. Stir occasionally to prevent sticking.

Step 5: Add Greens and Final Touches
Once the lentils are cooked, add the spinach (or other greens) and garam masala. Simmer for an additional 5 minutes. Taste and adjust the seasoning if needed.

Step 6: Serve
Ladle the soup into bowls and garnish with fresh cilantro. This Indian soup pairs wonderfully with rice or naan and provides a hearty meal that everyone will enjoy.

Nutritional Benefits

This Indian soup is not only comforting but also loaded with nutrients. Lentils are an excellent source of protein and fiber, which are essential for a balanced diet. The addition of vegetables not only enhances the flavor but also increases the vitamin content of the soup. Spinach, for example, is rich in iron and folate.

Variations

Feel free to customize this soup according to your preferences. You can add other vegetables such as bell peppers, zucchini, or peas. For a spicier kick, include green chilies or a splash of chili powder. If you're looking for a creamier texture, consider adding coconut milk towards the end of cooking.

Making Indian soup with lentils and vegetables is a straightforward process that yields delicious results. Whether you're serving it on a cold day or looking for a healthy meal option, this soup is sure to satisfy.
