How to Make a Flavorful Indian Mixed Vegetable Soup

Indian cuisine is known for its rich flavors and aromatic spices, and a mixed vegetable soup is a delightful way to enjoy both. This recipe is not only nutritious but also easy to prepare, making it perfect for a cozy evening or a family gathering. Below is a step-by-step guide on how to make a flavorful Indian mixed vegetable soup that will warm your heart and soul.

Ingredients

  • 2 tablespoons oil (olive or coconut oil)
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1-2 green chilies, slit (optional)
  • 1 cup chopped carrots
  • 1 cup chopped beans (green beans or string beans)
  • 1 cup chopped potatoes
  • 1 cup chopped tomatoes
  • 1 cup chopped spinach or kale
  • 4 cups vegetable or chicken broth
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

Step 1: In a large pot, heat the oil over medium heat. Add the cumin seeds and allow them to sizzle for a few seconds.

Step 2: Add the finely chopped onion to the pot and sauté until it becomes golden brown.

Step 3: Stir in the minced garlic, grated ginger, and slit green chilies. Cook for another 2 minutes until the raw smell disappears.

Step 4: Add the chopped carrots, beans, and potatoes. Sauté for about 5 minutes, allowing the vegetables to pick up the spices.

Step 5: Mix in the chopped tomatoes, turmeric powder, and garam masala. Cook for another 5 minutes, or until the tomatoes have softened.

Step 6: Pour in the vegetable or chicken broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are tender.

Step 7: Add the chopped spinach or kale in the last 5 minutes of cooking. Adjust the salt according to your taste.

Step 8: Once cooked, remove from heat and let it cool slightly before blending the soup to your desired consistency. You can puree it completely for a smooth texture or leave it chunky for more bite.

Step 9: Serve the soup hot, garnished with fresh coriander leaves. Pair it with warm naan or rice for a complete meal.

Tips for the Best Indian Mixed Vegetable Soup

  • Feel free to add any seasonal vegetables you have on hand, such as zucchini, cauliflower, or peas.
  • For a creamier texture, blend in a small amount of coconut milk or cream before serving.
  • Adjust the spices according to your preference. For a spicier soup, add more green chilies or a pinch of red chili powder.
  • Top it off with a squeeze of lemon juice for an extra zing!

This Indian mixed vegetable soup is not only packed with flavor but also brimming with nutrition, making it an ideal dish for anyone seeking a healthy yet satisfying meal. Enjoy this wholesome delight on its own or as part of an Indian-themed dinner!
