Preparation Steps

Step 1: Blanch the Spinach

Start by rinsing the spinach leaves thoroughly under cold water to remove any dirt or impurities. In a large pot, bring water to a boil. Once boiling, add the spinach leaves and blanch them for about 2-3 minutes until they wilt. Drain the spinach and immediately transfer it to a bowl of ice-cold water to retain its vibrant green color. After a few minutes, drain the spinach again and blend it into a smooth puree using a little water if necessary.

Step 2: Sauté the Aromatics

In a heavy-bottomed pan, heat the cooking oil or ghee over medium heat. Add the cumin seeds and let them splutter. Then, add the finely chopped onions and sauté until golden brown. Incorporate the ginger-garlic paste and slit green chilies, and cook for another 1-2 minutes until fragrant.

Step 3: Add Tomatoes and Spices

Next, add the pureed tomatoes to the pan and cook until the oil starts to separate from the mixture, which should take about 5-7 minutes. Stir in the turmeric powder, coriander powder, and salt. Mix well and allow the spices to cook for a minute.

Step 4: Combine Spinach and Simmer

Add the prepared spinach puree to the pan and mix thoroughly with the onion-tomato mixture. Let it simmer for about 5-10 minutes on low heat, stirring occasionally. Adjust the consistency by adding a little water if the curry is too thick.

Step 5: Finishing Touches

Near the end of cooking, add the garam masala and stir well. If desired, squeeze some lemon juice to enhance the flavor. Cook for another minute. For an extra touch of creaminess, you can stir in a little fresh cream before serving.
