How to Make Indian Gobi Manchurian (Cauliflower Stir-Fry)

Gobi Manchurian is a popular Indo-Chinese dish that combines the bold flavors of Indian spices with a delightful crunch from fried cauliflower. This dish can be served as an appetizer or a main course, making it a versatile option for any meal. Follow these steps to create a mouth-watering Gobi Manchurian at home!

Ingredients

For the cauliflower:

  • 1 medium-sized cauliflower, cut into florets
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon red chili powder
  • 1/2 teaspoon salt
  • Water, as needed
  • Oil, for deep frying

For the Manchurian sauce:

  • 2 tablespoons oil
  • 2-3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 medium onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2-3 green chilies, slit
  • 3 tablespoons soy sauce
  • 1 tablespoon tomato ketchup
  • 1 tablespoon chili sauce (adjust according to spice preference)
  • 1 teaspoon vinegar
  • 1/2 teaspoon black pepper
  • 2-3 green onions, chopped (for garnish)

Instructions

Step 1: Prepare the Cauliflower

Begin by washing the cauliflower and cutting it into small florets. In a mixing bowl, combine the all-purpose flour, cornstarch, red chili powder, and salt. Gradually add water to the mixture to form a smooth batter. It should be thick enough to coat the cauliflower without dripping off.

Step 2: Fry the Cauliflower

Heat oil in a deep frying pan over medium heat. Once the oil is hot, dip each cauliflower floret into the batter, ensuring it is well-coated. Carefully drop the battered florets into the hot oil. Fry until they turn golden brown and crispy, usually about 4-5 minutes. Remove them with a slotted spoon and place them on paper towels to absorb excess oil.

Step 3: Make the Manchurian Sauce

In another pan, heat 2 tablespoons of oil over medium heat. Add the minced garlic, ginger, and sauté until aromatic. Then, add the chopped onions and bell peppers, cooking until they soften.

Stir in the slit green chilies, soy sauce, tomato ketchup, chili sauce, vinegar, and black pepper. Mix well and cook for a couple of minutes, allowing the sauces to meld.

Step 4: Combine and Serve

Add the fried cauliflower to the sauce and toss gently to coat each piece uniformly. Cook for another 2-3 minutes, ensuring the cauliflower is heated through and well combined with the sauce.

Transfer the Gobi Manchurian to a serving dish and garnish with chopped green onions. Serve hot with fried rice or noodles for a complete meal!

Tips for Perfect Gobi Manchurian

To enhance the flavor, consider adding some chopped cilantro and sesame seeds for garnish. You can also adjust the spices and sauces according to your taste preference. Enjoy this delicious dish at your next gathering or simply as a comforting dinner!
