  • 1 cup red lentils (masoor dal)

Begin by rinsing the red lentils thoroughly under cold water. This helps remove any impurities and excess starch. Drain the water after rinsing.

In a pot, combine the washed lentils with 3 cups of water and add turmeric powder. Bring it to a boil, then lower the heat and let it simmer for about 20-25 minutes until the lentils are soft and mushy. Stir occasionally to prevent sticking.

Step 3: Prepare the Tempering

In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them crackle. Then add chopped onions and sauté until they turn golden brown.

Step 4: Add Aromatics

Next, add minced garlic, grated ginger, and green chilies to the pan. Sauté for another minute until the raw smell disappears.

Step 5: Incorporate Tomatoes

Stir in the chopped tomatoes and cook until they soften and blend into the mixture. Add salt and garam masala, mixing everything well. Allow this mixture to cook for 5-7 minutes until the oil starts to separate from the masala.

Step 6: Combine Lentils and Tempering

Once the lentils are cooked, add the tempering mixture from the pan into the pot of lentils. Stir well to combine. You can add more water if you prefer a thinner consistency.

Step 7: Simmer and Garnish

Let the dal simmer for another 5-10 minutes to allow the flavors to meld. Adjust the seasoning if necessary. Finally, garnish with fresh coriander leaves for an added touch of flavor.
