  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped

  • 3-4 green chilies, slit (adjust according to taste)
  • 1/4 cup plain yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 4 tablespoons vegetable oil or ghee

  • 2-3 green cardamom pods
  • 4-5 cloves

Step 1: Prepare the Rice

1. Rinse the basmati rice under cold water until the water runs clear.

1. Heat the oil or ghee in a large pot over medium heat.
2. Add the bay leaf, green cardamom, cloves, cinnamon, and cumin seeds. Sauté for a minute until fragrant.

1. Lower the heat and stir in the yogurt, mint, and coriander leaves.
2. Now, add the soaked rice evenly on top of the vegetable mixture.
3. Gently pour in enough water to cover the rice (approximately 4 cups). Sprinkle the garam masala on top.
4. Bring the mixture to a boil, then reduce the heat to low, cover with a lid, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed all the water.

Step 4: Serve the Biryani

1. Once cooked, turn off the heat and let the biryani sit, covered, for another 10 minutes.
2. Gently fluff the rice with a fork, mixing the layers carefully.
3. Serve hot, garnished with additional fresh coriander and mint if desired. Pair with raita (yogurt sauce) or salad for a complete meal.
