  • 200g firm tofu, cubed
  • 2 cups fresh spinach, washed and chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 medium tomato, diced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • ½ cup coconut milk
  • 2 tablespoons oil (olive or vegetable)
  • Salt to taste

Instructions

Step 1: Preparing the Tofu

Begin by pressing the tofu to remove excess water. Wrap the tofu block in a clean kitchen towel and place a heavy object on top for about 20 minutes. Once pressed, cut the tofu into cubes. This step ensures that your tofu absorbs the flavors of the curry better.

Step 2: Cooking the Tofu

In a large skillet, heat 2 tablespoons of oil over medium heat. Add the cubed tofu and sauté until golden brown on all sides. This should take approximately 5-7 minutes. Once done, remove the tofu from the skillet and set aside. This creates a crispy texture that enhances the dish.

Step 3: Sautéing the Aromatics

In the same skillet, add the cumin seeds and let them splutter. Next, add the chopped onion and sauté until it turns translucent. This usually takes about 5 minutes. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Step 4: Making the Curry Base

Add the diced tomato to the skillet along with turmeric powder, coriander powder, and salt. Cook this mixture until the tomatoes break down and the oil begins to separate from the spices, about 5-7 minutes. This step develops a rich flavor base for your curry.

Step 5: Adding Spinach and Tofu

Once the tomato mixture is ready, add the chopped spinach to the skillet. Cook it down until wilted, which should take about 2-3 minutes. Next, return the golden tofu to the pan and gently stir to combine.

Step 6: Finishing Touches

Pour in the coconut milk and sprinkle the garam masala over the mixture. Stir well and let it simmer for another 5 minutes on low heat. This allows the flavors to meld beautifully while creating a creamy consistency for the curry.

Step 7: Garnish and Serve

Once the curry is ready, taste and adjust the seasoning if necessary. Serve the Indian Tofu and Spinach Curry hot, garnished with fresh cilantro if desired. This dish pairs wonderfully with basmati rice, naan, or roti, making it a complete meal.
