Ingredients

  • 2 cups fresh spinach (palak), washed and chopped

Instructions

Step 1: Prepare the Spinach

Start by blanching the spinach. Bring a pot of water to a boil and add the chopped spinach. Cook for 2-3 minutes until it wilts. Drain and immediately rinse with cold water to preserve the vibrant green color. Once cooled, blend the spinach into a smooth puree. Set aside.

Step 2: Cook the Potatoes

In a large pan, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds. Next, add the chopped onions and sauté until they turn golden brown.

Step 3: Add Spices and Potatoes

Stir in the ginger-garlic paste and green chilies. Cook for an additional minute until fragrant. Add the diced potatoes, turmeric powder, coriander powder, and salt. Mix well to coat the potatoes with spices. Pour in a bit of water, cover the pan, and simmer for about 10 minutes until the potatoes are tender.

Step 4: Combine Spinach and Potatoes

Once the potatoes are cooked, add the spinach puree to the pan. Mix everything thoroughly and let it simmer for another 5 minutes. If the consistency is too thick, you can add a little water to achieve your desired thickness.

Step 5: Final Touches

Sprinkle garam masala over the curry and gently stir. Allow the flavors to meld together for a couple of minutes. Taste and adjust the salt if needed.

Step 6: Serve
