How to Make Indian Vegetable Samosas

Indian vegetable samosas are a delicious and popular snack, loved for their crispy exterior and flavorful filling. These fried or baked pastries are perfect for serving at parties, as appetizers, or for enjoying as an afternoon snack. In this article, we will guide you through the steps to make authentic Indian vegetable samosas at home.

Ingredients

To make approximately 12 samosas, you will need the following ingredients:

  • For the dough:
    • 2 cups all-purpose flour
    • 1/4 cup oil or ghee
    • 1/2 tsp salt
    • Water (as needed)
  • For the filling:
    • 2 medium potatoes, boiled and mashed
    • 1/2 cup green peas (fresh or frozen)
    • 1 onion, finely chopped
    • 1-2 green chilies, finely chopped (adjust to taste)
    • 1 tsp ginger-garlic paste
    • 1 tsp cumin seeds
    • 1 tsp garam masala
    • 1/2 tsp turmeric powder
    • Salt to taste
    • Fresh coriander leaves, chopped (optional)
  • For frying:
    • Oil (for deep frying)

Instructions

Preparing the Dough

1. In a large mixing bowl, combine the all-purpose flour and salt.
2. Add the oil or ghee and mix until the flour resembles coarse crumbs.
3. Gradually add water and knead to form a smooth and firm dough.
4. Cover the dough with a damp cloth and let it rest for 30 minutes.

Making the Filling

1. Heat 2 tablespoons of oil in a pan over medium heat.
2. Add the cumin seeds and let them sizzle for a few seconds.
3. Add the finely chopped onion and sauté until golden brown.
4. Stir in the ginger-garlic paste and green chilies; cook for another minute.
5. Add the mashed potatoes, green peas, turmeric powder, garam masala, and salt. Stir well to combine.
6. Cook the mixture for about 5-7 minutes, then remove it from heat.
7. Optionally, fold in fresh coriander leaves for added flavor.

Assembling the Samosas

1. Divide the rested dough into equal-sized balls (about the size of a golf ball).
2. Roll each ball into a thin oval shape, about 6 inches long.
3. Cut the oval in half to form two semicircles.
4. Take one semicircle and form a cone by bringing the two straight edges together.
5. Seal the edge using a little water.
6. Fill the cone with the vegetable filling, leaving some space at the top.
7. Seal the open edge by pinching it together with your fingers, ensuring there are no gaps.

Frying the Samosas

1. Heat oil in a deep frying pan over medium heat. To check if the oil is hot enough, drop a small piece of dough; if it sizzles and rises to the surface, it's ready.
2. Carefully add the filled samosas to the hot oil, a few at a time, making sure not to overcrowd the pan.
3. Fry the samosas until golden brown and crispy, turning them occasionally to ensure even cooking.
4. Remove them from the oil using a slotted spoon and drain on paper towels to remove excess oil.

Serving Suggestions

Serve your delicious vegetable samosas hot with mint chutney or tamarind sauce for dipping. They pair perfectly with a cup of masala chai for a true Indian tea-time experience.

Conclusion

Making Indian vegetable samosas at home is a rewarding process that results in a tasty treat your friends and family will love. Enjoy your cooking adventure and savor every bite of these delightful pastries!
