How to Make Indian Masala Dosa (Spiced Crepes)

Preparation of Dosa Batter

1. Rinse the rice and urad dal separately under running water until the water runs clear.

2. Soak the rice, urad dal, and fenugreek seeds in enough water for at least 4-6 hours or overnight.

3. Drain the soaked ingredients and blend them into a smooth paste using a little water. The consistency should be similar to pancake batter.

4. Transfer the batter to a large bowl, add salt, and mix well. Cover the bowl and let it ferment in a warm place for about 8-12 hours, or until the batter has doubled in size and has a slightly sour aroma.

Preparation of Potato Filling

1. In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter.

2. Add the chopped onions and sauté until they turn translucent.

3. Stir in the green chili, turmeric powder, and salt. Cook for a minute.

4. Add the boiled and mashed potatoes, mixing them well with the spices. Cook for another 2-3 minutes, then garnish with chopped coriander leaves. Set aside.

Cooking Masala Dosa

1. Heat a non-stick skillet or tava (griddle) over medium heat. Once hot, lightly grease it with oil.

2. Pour a ladleful of dosa batter onto the skillet, spreading it in a circular motion to form a thin crepe.

3. Drizzle a little oil around the edges and on top of the dosa. Cook until the edges start to lift and the bottom turns golden brown, about 2-3 minutes.

4. Place a portion of the potato filling in the center of the dosa and fold it over. Cook for another minute, then remove it from the skillet.

Serving Suggestions
