How to Make Indian Vegetable Casserole

Indian Vegetable Casserole is a delightful and nutritious dish that brings together the rich flavors of Indian cuisine in a comforting baked format. Ingredients

  • 2 cups mixed vegetables (carrots, peas, beans, and bell peppers)
  • 1 cup cooked basmati rice or quinoa
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 cup yogurt or coconut cream for a vegan option
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves, for garnishing
  • 1/2 cup grated cheese (optional)

Instructions

Step 1: Prepare the Vegetables

In a large skillet, heat oil or ghee over medium heat. Add cumin seeds and let them splutter. Next, add the finely chopped onions and sauté them until they turn golden brown. Stir in the ginger-garlic paste and cook for an additional minute until the raw smell dissipates.

Step 2: Cook the Base

Add the chopped tomatoes to the skillet and cook until they become soft and mushy. Sprinkle in the turmeric, red chili powder, and salt. Mix well and let the mixture cook for about 5-7 minutes, allowing the spices to infuse the vegetables.

Step 3: Add Vegetables and Rice

Stir in the mixed vegetables and cook for another 5-10 minutes until they are tender. Next, combine the cooked basmati rice or quinoa into the vegetable mixture. Mix thoroughly to ensure the rice is well-coated with the spices.

Step 4: Prepare the Casserole

Preheat your oven to 180°C (350°F). In a large baking dish, spread half of the vegetable rice mixture evenly at the bottom. Pour half the yogurt or coconut cream over it. Then, layer the remaining vegetable rice mixture on top and pour the remaining yogurt or cream. If using, sprinkle grated cheese evenly over the top.

Step 5: Bake the Casserole

Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for about 25-30 minutes or until heated through. If using cheese, remove the foil for the last 5-10 minutes to let the cheese melt and turn golden brown.

Step 6: Garnish and Serve

Once out of the oven, let the casserole cool for a few minutes. Garnish with freshly chopped coriander leaves before serving. This Indian Vegetable Casserole pairs beautifully with naan or a side salad for a well-rounded meal.
