To make Indian Vegetable Biryani, gather the following ingredients:

  • 2 cups basmati rice
  • 1 cup mixed vegetables (carrots, peas, beans, potatoes)
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 3-4 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 tablespoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 3 tablespoons cooking oil or ghee
  • 1/4 cup mint leaves, chopped
  • 1/4 cup coriander leaves, chopped
  • 4 cups water

Instructions

Step 1: Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside. This soaking helps the rice cook more evenly.

Step 2: Cook the Vegetables

In a large pot or pressure cooker, heat the oil or ghee over medium heat. Add the cumin seeds and allow them to splutter. Then, add the sliced onions and sauté until golden brown.

Next, add the ginger-garlic paste and green chilies. Sauté for a few more minutes until the raw smell fades. Add the chopped tomatoes and cook until they soften.

Now, stir in the mixed vegetables, salt, coriander powder, and garam masala. Cook for about 5-7 minutes, stirring occasionally.

Step 3: Layer the Biryani

Once the vegetables are cooked, add the soaked and drained basmati rice to the pot. Gently mix everything to combine. Pour in the water and bring it to a boil. If desired, you can add saffron strands soaked in a little warm water for added flavor and color.

After the water boils, cover the pot with a tight-fitting lid. Reduce the heat to low and let it steam for about 20-25 minutes, or until the rice is cooked through and the water is absorbed.

Step 4: Garnish and Serve

Once your biryani is cooked, turn off the heat and let it rest for an additional 10 minutes. Just before serving, fluff the rice gently with a fork to separate the grains. Garnish with chopped mint and coriander leaves.
