Ingredients

For the Paratha:

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon oil
  • Water (as needed)

  • 1 cup mixed vegetables (carrots, bell peppers, peas, and beans)
  • 1 medium onion, thinly sliced
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt (to taste)
  • 2 tablespoons oil
  • Fresh coriander leaves, chopped

For the Mint Chutney:

  • 1 cup fresh mint leaves
  • ½ cup fresh coriander leaves
  • 1 tablespoon lemon juice
  • 1 green chili (optional)
  • Salt (to taste)

Instructions

Step 1: Making the Paratha

1. In a large mixing bowl, combine the all-purpose flour, salt, and oil. Gradually add water and knead into a smooth dough. Cover with a damp cloth and let it rest for at least 30 minutes.


2. After resting, divide the dough into small balls. Roll each ball into a thin circle, about 6-8 inches in diameter, while dusting with flour to prevent sticking.


3. Heat a flat skillet or tawa over medium heat and cook the rolled paratha one at a time until golden and slightly crisp on both sides. Set aside.

Step 2: Preparing the Vegetable Filling

1. In a pan, heat 2 tablespoons of oil over medium heat. Add the sliced onions and sauté until translucent.


2. Add the ginger-garlic paste and green chilies; sauté for another minute until fragrant.


3. Toss in the mixed vegetables along with turmeric, red chili powder, garam masala, and salt. Cook until the vegetables are tender yet crunchy.


4. Stir in the chopped coriander leaves and remove from heat. Allow the mixture to cool slightly.

Step 3: Making the Mint Chutney

1. In a blender, combine mint leaves, coriander leaves, lemon juice, green chili (if using), and salt. Blend to form a smooth paste. Adjust seasoning as needed.

Step 4: Assembling the Kathi Rolls

1. Take a cooked paratha and place a generous amount of the vegetable filling in the center.


2. Drizzle some mint chutney over the filling for added flavor.


3. Roll the paratha tightly around the filling, tucking in the sides to secure it. You can wrap it in parchment paper or foil for easy handling.
