Ingredients

  • 300 grams of prawns, cleaned and deveined
  • 1 cup basmati rice
  • 2 tablespoons oil or ghee
  • 1 large onion, thinly sliced
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 2-3 cloves
  • 2-3 green cardamom pods
  • 1 stick of cinnamon
  • 2-3 bay leaves
  • 1 cup roughly chopped tomatoes
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 cups water or prawn stock
  • Fresh coriander leaves, chopped for garnish
  • Fried onions for garnish (optional)

Instructions

Step 1: Preparing the Rice

Start by rinsing the basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky. Soak the rice in water for about 30 minutes, then drain and set aside.

Step 2: Marinating the Prawns

In a bowl, marinate the cleaned prawns with a pinch of salt, turmeric powder, and red chili powder. Allow them to sit for about 15-20 minutes to absorb the flavors.

Step 3: Cooking the Spices

Heat oil or ghee in a large pan over medium heat. Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaves. Sauté for a minute until the spices are aromatic.

Step 4: Sautéing Onions and Tomatoes

Add the sliced onions to the pan. Cook until they turn golden brown, then stir in the ginger-garlic paste and green chilies. Sauté for another minute.

Next, add the chopped tomatoes and cook until they soften. Season with salt, and cook until the oil separates from the mixture, indicating that the masala is ready.

Step 5: Cooking the Prawns

Add the marinated prawns to the pan and cook for about 4-5 minutes until they turn pink and opaque. Be careful not to overcook the prawns, as they can become rubbery.

Step 6: Combining Rice and Water

Now, add the soaked and drained basmati rice to the pan. Gently stir the rice into the prawn mixture, ensuring each grain is coated with the spices. Then, pour in the water or prawn stock and bring it to a boil.

Step 7: Cooking the Pulao

Once boiling, reduce the heat to low, cover the pan with a lid, and let it cook for 15-20 minutes. Avoid opening the lid as the steam is essential for cooking the rice perfectly.

Step 8: Final Touches

After cooking, remove the pan from the heat and let it sit for 5 minutes. Fluff the prawn pulao gently with a fork, and garnish with fresh coriander leaves and fried onions, if desired.
