Step 1: Roasting the Vegetables

Preheat your oven to 400°F (200°C). Spread the mixed vegetables on a baking sheet, drizzle with olive oil, and season with salt, pepper, turmeric, and coriander powder. Step 3: Combining Ingredients

Once your onion, garlic, and ginger mixture is ready, add the roasted vegetables to the pot. Pour in the vegetable or chicken broth and stir in the garam masala. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes to allow the flavors to meld.

Step 4: Blending the Soup

After simmering, you can blend the soup to your desired consistency. For a creamier texture, use an immersion blender to puree it directly in the pot. Alternatively, you can transfer it to a blender in batches. If you prefer a chunkier soup, blend only half of the mixture.
