  • Ingredients: 2 medium potatoes, 1 medium cauliflower, 1 onion, 2 tomatoes, ginger-garlic paste, turmeric powder, cumin seeds, coriander powder, garam masala, salt, and cilantro for garnish.
  • Instructions:
    1. Cut the potatoes and cauliflower into bite-sized pieces.
    2. Heat oil in a pan, add cumin seeds, and let them splutter.
    3. Add chopped onions and sauté until golden brown.
    4. Stir in the ginger-garlic paste, followed by tomatoes and spices. Cook until the tomatoes soften.
    5. Add potatoes and cauliflower. Stir well to coat with spices.
    6. Cover and cook on low heat until the vegetables are tender.

    5. Add the mashed eggplant and mix well. Cook for a few more minutes.

4. Palak Paneer (Spinach and Cottage Cheese)

Palak Paneer is a popular dish made with spinach and paneer, a type of Indian cottage cheese. It is creamy, nutritious, and packed with flavor.

  • Ingredients: 4 cups spinach, 200g paneer, 1 onion, 2 tomatoes, ginger-garlic paste, cumin seeds, cream, and spices.
  • Instructions:
    1. Blanch the spinach and puree it until smooth. Set aside.
