How to Make Indian Chana Masala (Chickpea Curry)

Chana Masala, also known as Chickpea Curry, is a popular Indian dish that is not only delicious but also packed with protein and flavor. Ingredients for Indian Chana Masala

To prepare Chana Masala, you will need the following ingredients:

  • 1 cup dried chickpeas (or 2 cans of cooked chickpeas)
  • 2 tablespoons cooking oil
  • 1 large onion, finely chopped
  • 1-2 green chilies, slit (adjust to taste)
  • 1 tablespoon ginger-garlic paste
  • 2 large tomatoes, pureed
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro, for garnishing
  • 1-2 cups water (depending on desired consistency)

Instructions for Making Indian Chana Masala

Step 1: Prepare the Chickpeas

If using dried chickpeas, soak them in water overnight or for at least 8 hours. After soaking, rinse the chickpeas and cook them in a pressure cooker with enough water until they are soft (about 15-20 minutes). If you are using canned chickpeas, simply drain and rinse them.

Step 2: Sauté Aromatics

In a large pan, heat the cooking oil over medium heat. Add the cumin seeds and allow them to sizzle for a few seconds. Then, add the finely chopped onions and sauté until they turn golden brown. This step is crucial for building flavor in your Chana Masala.

Step 3: Add Chilies and Ginger-Garlic Paste

Once the onions are browned, stir in the slit green chilies and ginger-garlic paste. Cook for another 2 minutes until the raw smell of ginger-garlic disappears.

Step 4: Incorporate Tomatoes and Spices

Add the pureed tomatoes to the pan and mix well. Allow the mixture to cook until the oil starts to separate from the tomato mixture, about 5-7 minutes. Then, add the turmeric, red chili powder, coriander powder, and salt. Stir to combine and let it cook for another 5 minutes.

Step 5: Add Chickpeas

Now, add the cooked chickpeas to the pan, mixing them well with the spices. Pour in 1-2 cups of water depending on how thick or soupy you prefer your curry. Bring it to a boil, then cover and simmer for about 10-15 minutes, allowing all the flavors to meld together.

Step 6: Finish with Garam Masala

After simmering, sprinkle the garam masala over the curry and stir to incorporate. Let it cook for an additional 2-3 minutes. Taste and adjust salt if necessary.

Step 7: Garnish and Serve

Once done, remove from heat and garnish with freshly chopped cilantro. Serve your delicious Chana Masala with boiled rice, naan, or roti for a complete meal.

Tips for the Perfect Chana Masala

  • For extra richness, you can add a tablespoon of butter or cream right before serving.
  • Adjust the spices according to your heat preference—add more chilies for a spicier dish.
