How to Make Indian Malai Kofta with a Tomato Gravy

Indian Malai Kofta is a beloved dish that features deep-fried dumplings made from paneer and vegetables, served in a rich and creamy tomato gravy. Ingredients

To make Malai Kofta, you will need the following ingredients:

  • For the Kofta:
  • 1 cup paneer (cottage cheese), grated
  • 1 medium potato, boiled and mashed
  • 1/4 cup grated carrots
  • 1/4 cup finely chopped green beans
  • 1/4 teaspoon garam masala
  • Salt, to taste
  • 1 tablespoon cornflour (optional for binding)
  • Oil, for deep frying
  • For the Tomato Gravy:
  • 3-4 ripe tomatoes, pureed
  • 1 medium onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup cream
  • 1 tablespoon ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • Salt, to taste
  • Fresh coriander leaves, for garnish

Instructions

Step 1: Prepare the Kofta

1. In a mixing bowl, combine the grated paneer, boiled potato, grated carrots, and finely chopped green beans. Add garam masala and salt.

2. Mix the ingredients until well combined. If the mixture feels too loose, add cornflour to help bind it.

3. Form small balls (koftas) from the mixture, approximately the size of a golf ball.

4. Heat oil in a deep frying pan over medium heat. Carefully drop the koftas into the hot oil and fry them until golden brown. Remove them and place them on a paper towel to drain excess oil.

Step 2: Make the Tomato Gravy

1. In a pan, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until they turn translucent.

3. Stir in the minced garlic and grated ginger, cooking until fragrant.

4. Pour in the pureed tomatoes, and add coriander powder, red chili powder, turmeric powder, and salt. Cook until the oil separates from the gravy and it thickens, about 10-15 minutes.

5. Lower the heat and stir in the cream. Mix until well incorporated and simmer for a few minutes.

Step 3: Combine and Serve

1. Gently add the fried koftas into the tomato gravy. Let them soak in the gravy for a few minutes before serving.

2. Garnish with fresh coriander leaves.

3. Serve hot with naan, rice, or parathas.

  • Ensure the koftas are fried on medium heat to achieve a crispy texture.
  • For a richer flavor, add a pinch of kasuri methi (dried fenugreek leaves) to the gravy.
