Instructions

Step 1: Prepare the Tofu

Begin by pressing your tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15-20 minutes. Once pressed, cut the tofu into bite-sized cubes.

Step 2: Cook the Tofu

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, approximately 5-7 minutes. Remove the tofu from the skillet and set it aside.

Step 3: Stir Fry the Vegetables

In the same skillet, add the remaining tablespoon of oil. Sauté the sliced onion for 2-3 minutes until translucent, then add the minced garlic and ginger. Stir for another minute until fragrant.

Next, add the bell pepper, broccoli, snap peas, and carrots. Stir fry the vegetables for about 5-7 minutes until they are tender yet crisp. You want to maintain their vibrant colors and crunch.

Step 4: Combine Everything

Return the cooked tofu to the skillet. Sprinkle the soy sauce, curry powder, turmeric, salt, and pepper over the mixture. Gently toss everything together until the tofu and vegetables are well-coated with the spices. Cook for an additional 2-3 minutes to heat everything through.

Step 5: Serve and Enjoy

Once your Indian Tofu and Vegetable Stir Fry is cooked, remove it from the heat. Serve hot, garnished with fresh cilantro if desired. This dish pairs wonderfully with steamed rice or quinoa, making it a perfect balanced meal.
