How to Make Traditional Indian Vegetarian Pulao

Pulao, a fragrant and flavorful rice dish, is a delightful staple in Indian cuisine. This traditional Indian vegetarian pulao is not only easy to prepare, but it also bursts with aromatic spices, fresh vegetables, and herbs. Follow this simple recipe to create an authentic pulao that will impress your family and friends.

Ingredients

To make a traditional Indian vegetarian pulao, you will need the following ingredients:

  • 1 cup basmati rice
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 4-5 whole black peppercorns
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 1 medium onion, sliced
  • 2-3 green chilies, slit
  • 1 cup mixed vegetables (carrots, peas, beans, potatoes)
  • 2-3 cups water
  • Salt, to taste
  • Fresh coriander leaves, for garnish
  • Lemon wedges, for serving

Instructions

Step 1: Preparing the Rice

Start by rinsing the basmati rice thoroughly under cold water until the water runs clear. This step removes excess starch and helps achieve fluffy grains. Soak the rice in water for about 30 minutes and then drain.

Step 2: Sautéing the Spices

In a heavy-bottomed pot or pressure cooker, heat the ghee or oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

Next, add the bay leaf, black peppercorns, cloves, and cinnamon stick. Sauté the spices for a minute until they release their fragrant aroma.

Step 3: Adding Vegetables and Onions

Add the sliced onions to the pot and sauté until they turn golden brown. This adds a rich, sweet flavor to the pulao.

Stir in the slit green chilies and mixed vegetables. Cook for another 3-4 minutes, allowing the vegetables to soften slightly.

Step 4: Cooking the Pulao

Add the drained basmati rice to the pot and gently stir to combine with the spices and vegetables. Sauté the rice for a couple of minutes, ensuring it absorbs the flavors.

Now, pour in 2-3 cups of water (depending on your desired consistency), and add salt to taste. Bring the mixture to a boil.

If using a pressure cooker, cover it and cook for 2 whistles. If using a regular pot, reduce the heat to low, cover, and let it simmer for about 15-20 minutes until the rice is cooked and the water is absorbed.

Step 5: Fluffing and Serving

Once the rice is cooked, turn off the heat and let it rest for 5 minutes before opening the lid. Fluff the pulao gently with a fork to separate the grains.

Garnish with fresh coriander leaves for a pop of color and freshness. Serve the traditional Indian vegetarian pulao hot with lemon wedges, yogurt, or your favorite chutney.

  • Ensure the rice is soaked well, as this aids in achieving longer grains.
  • Feel free to customize the vegetables based on your preference or seasonal availability.
