How to Make the Perfect Prawn Masala

Prawn masala is a delightful dish that captures the essence of Indian cuisine with its aromatic spices and succulent prawns. Whether you are hosting a dinner party or preparing a family meal, this dish is sure to impress. Follow these steps to create the perfect prawn masala.

Ingredients:

  • 500 grams of medium-sized prawns, cleaned and deveined
  • 2 tablespoons oil (preferably coconut or vegetable oil)
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, slit (adjust to taste)
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

Step 1: Prepare the Prawns

Start by cleaning the prawns thoroughly under running water. Remove the shell and devein them if not done already. Pat them dry and set aside.

Step 2: Sauté the Onions

In a heavy-bottomed pan, heat the oil over medium heat. Once hot, add the chopped onions and sauté until they become golden brown. Stir frequently to prevent burning.

Step 3: Add Ginger-Garlic Paste

Now, add the ginger-garlic paste and green chilies to the pan. Sauté for about 2-3 minutes until the raw smell disappears and the mixture is fragrant.

Step 4: Incorporate Spices

Lower the heat and add turmeric powder, red chili powder, and coriander powder. Mix well and cook for another minute, allowing the spices to bloom.

Step 5: Add Tomato Puree

Add the pureed tomatoes to the pan and stir well. Cook this mixture until the oil starts to separate from the masala, usually around 5-7 minutes.

Step 6: Cook the Prawns

Now it's time to add the cleaned prawns. Stir them into the masala and cook for about 5 minutes until they turn pink and are cooked through. Make sure not to overcook them, or they will become rubbery.

Step 7: Finishing Touches

Once the prawns are cooked, sprinkle the garam masala over the dish and adjust the salt to taste. Give it a gentle stir and cook for another 2 minutes.

Step 8: Garnish and Serve

Finally, turn off the heat and garnish the prawn masala with fresh coriander leaves. Serve it hot with steamed rice, naan, or roti for a complete meal.
