Step 1: Prepare the Peppers

Start by preheating your oven to 375°F (190°C). Carefully cut the tops off the bell peppers and remove all seeds and membranes. You can keep the tops for extra decoration or chop them for the stuffing mixture. Place the hollowed peppers upright in a baking dish.

Step 2: Cook the Filling

Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle. Then, add the chopped onion, sautéing until golden brown. Incorporate the minced garlic and ginger paste, cooking until fragrant.

Now, add the chopped tomato and cook until it softens. Stir in garam masala, turmeric, and salt. Sauté this mixture until the oil starts to separate. Finally, mix in the cooked rice and chickpeas, stirring until everything is evenly combined. Taste for seasoning and adjust as needed.

Step 3: Stuff the Peppers

Carefully fill each bell pepper with the prepared rice and chickpea mixture. Press down gently to pack the stuffing close. If you have leftover filling, you can place it around the stuffed peppers in the baking dish.

Step 4: Bake the Stuffed Peppers

Cover the dish with foil to retain moisture and bake for about 25 minutes. After this time, remove the foil and let them bake for an additional 10 minutes, or until the peppers are tender and slightly charred on top.

Step 5: Serve

Once the peppers are done, remove them from the oven and let them cool slightly. Garnish with freshly chopped coriander leaves. Serve Indian stuffed peppers warm, alongside a tangy yogurt sauce or a fresh green salad to balance the spices.
