How to Make Indian Malai Kofta

Ingredients

To prepare Malai Kofta, you'll need the following:

  • 1 cup grated paneer (Indian cottage cheese)

  • 1/4 cup finely grated carrot
  • 2 tablespoons all-purpose flour (maida)
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste

  • 2 tablespoons ghee (clarified butter) or oil

  • 1/4 cup heavy cream

  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Coriander leaves for garnishing

Instructions

Step 1: Prepare the Kofta

1. In a mixing bowl, combine the grated paneer, mashed potatoes, grated carrot, all-purpose flour, garam masala, red chili powder, and salt.

2. Mix well until you get a dough-like consistency. If the mixture is too wet, add a little more flour.

3. Divide the mixture into small portions and shape them into round balls.

4. Heat oil in a deep frying pan. Once hot, carefully drop the kofta balls into the oil, frying them until they are golden brown. Remove and drain on paper towels.

Step 2: Prepare the Gravy

1. In a pan, heat ghee or oil. Add cumin seeds and let them crackle.

2. Add the chopped onions and sauté until golden brown.

3. Stir in the ginger-garlic paste and sauté for a minute until the raw smell disappears.

4. Add the tomato puree and cook for 5-7 minutes, stirring occasionally, until the oil separates from the mixture.

5. Add coriander powder, turmeric powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.

6. Pour in the heavy cream, stir, and let it simmer for a few minutes until the gravy thickens.

Step 3: Assemble the Dish

Once the gravy is ready, gently place the fried kofta balls into the gravy. Allow them to soak in the flavors for a couple of minutes. Be cautious not to let them sit too long or they'll get too soft.

Serving Suggestions

Garnish your Malai Kofta with freshly chopped coriander leaves and serve hot with naan, roti, or steamed basmati rice. This dish pairs wonderfully with a side of cucumber salad or raita to balance the flavors.
