Ingredients Needed

  • 1 cup whole wheat flour (gehun ka atta)

  • 1 tablespoon yogurt (optional, for softness)
  • 1 teaspoon sesame seeds (til)
  • 1/2 teaspoon turmeric powder (haldi)
  • 1 teaspoon red chili powder (lal mirch)
  • 1/2 teaspoon cumin powder (jeera)
  • Salt to taste
  • Water, as needed for kneading
  • Oil or ghee for cooking

Step-by-Step Instructions

Step 1: Preparing the Dough

In a large mixing bowl, combine the whole wheat flour, besan, finely chopped fenugreek leaves, sesame seeds, turmeric powder, red chili powder, cumin powder, and salt. Mix these dry ingredients well.

Add yogurt to the mixture if you’re using it, as it adds softness to the dough. Gradually add water, a little at a time, and knead the mixture into a smooth and pliable dough. Cover the dough with a damp cloth and let it rest for at least 15-20 minutes.

Step 2: Rolling the Theplas

After the dough has rested, divide it into equal-sized balls, about the size of a golf ball. Lightly dust your work surface with flour to prevent sticking. Take one ball of dough, flatten it slightly, and roll it out into a thin circle using a rolling pin. Try to keep the thickness even.

Step 3: Cooking the Thepla

Heat a tawa (griddle) or non-stick skillet over medium heat. Once hot, place the rolled-out thepla on the tawa. Cook for 30-40 seconds until small bubbles start forming on the surface.

Flip the thepla over and drizzle a little oil or ghee around the edges. Cook for another 30 seconds, then flip again. Press gently with a spatula to ensure even cooking and allow it to puff up. Cook until both sides are golden brown.

Step 4: Serving the Theplas

Once cooked, remove the methi thepla from the tawa and place it in a container lined with a kitchen towel to keep them warm. Repeat the process for the remaining dough balls.

Methi thepla can be served warm with various accompaniments such as yogurt, pickle, or salad. It pairs well with a hot cup of tea, making it a perfect snack or breakfast option.
