Ingredients

For the dough:

  • 2 cups whole wheat flour
  • ½ teaspoon salt
  • Water (as needed)

  • 1 cup finely chopped spinach
  • 1 cup mashed potatoes
  • ½ cup finely chopped onions
  • 2-3 green chilies (finely chopped)
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon oil

Instructions

Step 1: Prepare the Dough

In a large mixing bowl, combine whole wheat flour and salt. Gradually add water while kneading the flour to form a soft and pliable dough. You can add oil for extra softness, but it’s optional. Cover the dough with a damp cloth and let it rest for about 30 minutes.

Step 2: Make the Filling

Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Next, add chopped onions and sauté until they are translucent. Add grated carrots, chopped spinach, and mashed potatoes to the mixture. Stir well and cook for a few minutes until the vegetables are cooked through.

Add green chilies, garam masala, and salt. Mix everything thoroughly and cook for another couple of minutes. Remove the filling from heat and let it cool.

Step 3: Roll Out the Parathas

Divide the dough into equal-sized balls. Take one ball and flatten it slightly. Roll it into a small circle using a rolling pin, dusting with flour to prevent sticking.

Place a generous amount of the vegetable filling in the center of the rolled dough. Bring the edges together to cover the filling and pinch to seal it. Gently flatten the stuffed ball and roll it out again into a larger circle, taking care not to let the filling spill out.

Step 4: Cook the Parathas

Heat a tawa or skillet over medium heat. Once hot, place the rolled paratha on it. Cook for about 1-2 minutes or until you see brown spots. Flip the paratha and apply a little oil or ghee on the cooked side. Cook the other side for an additional 1-2 minutes, pressing gently with a spatula to ensure even cooking and browning.

Repeat this process for all the stuffed parathas.

Step 5: Serve Hot
