  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons chopped cilantro (optional)
  • Water (as needed)
  • Ghee or oil for cooking

Step 1: Prepare the Dough

1. In a large mixing bowl, combine the whole wheat flour and a pinch of salt.

2. Gradually add water and knead the flour into a smooth, soft dough. Cover the dough with a damp cloth and let it rest for at least 20-30 minutes.

Step 2: Make the Filling

1. In another bowl, combine the boiled and mashed potatoes with cumin seeds, garam masala, red chili powder, salt, and chopped cilantro (if using).

2. Mix well until all ingredients are combined. Taste and adjust seasoning as needed.

Step 3: Roll Out the Parathas

1. After the dough has rested, divide it into equal balls, about the size of a golf ball.

2. Take one dough ball and flatten it slightly. Dust it with flour to prevent sticking.

3. Using a rolling pin, roll the dough into a small circle (4-5 inches in diameter).

4. Place a tablespoon of the potato filling in the center of the rolled dough circle.

5. Bring the edges together to seal the filling inside, forming a pouch. Pinch the edges to ensure it’s well sealed.

6. Gently flatten the filled pouch and roll it out again into a larger circle (6-7 inches in diameter), being careful not to press too hard to avoid the filling coming out.

Step 4: Cooking the Aloo Paratha

1. Heat a tava or flat skillet over medium heat.

2. Once hot, place the rolled-out paratha on the skillet.

3. Cook for about 1-2 minutes until bubbles start to form, then flip the paratha.

4. On the flipped side, apply a little ghee or oil and cook for another 1-2 minutes until golden brown.

5. Flip again, applying more ghee or oil as needed, and cook until both sides are crispy and golden.

6. Repeat the process for the remaining dough balls and potato filling.

Serving Suggestions

Once cooked, serve the Aloo Parathas hot with a dollop of butter, pickle, yogurt, or your favorite chutney. A side of fresh salad can also enhance the meal.
